Dveri Pax Brut

2013 DP Brut

Sparkling wine

Pale lemon colour with tiny, numerous bubbles and lively effervescence. Medium intense on the nose, refined. There are notes of roasted almonds and hazelnuts, with nice supplement of ripe yellow apples and fine spices on the back. It opens nicely with time and provides a finely assembled sensation.  Very dry on the palate, lively with high acidities. Due to a long ageing, the texture is fine and oily. Taste on the palate is gracious and rounded. With a long finish. Elegant, fine, intense.

Though it has spent years on the lees this is still a great aperitif, but will accompany greatly most of the dishes, especially shellfish, fish, lobster, salmon, trout, sushi …

  • Chardonnay: 70 %
  • Pinot Noir: 30 %

2013 vintage started late with almost optimal June and July and some of the highest temperatures in history in early August. September was rather cool and wet resulting in a white wine vintage with fresh acidities, moderate alcohol levels and lovely aromatic profiles. A classic vintage.

Vajgen

Classic, bottle fermented, 72 months ageing on the lees.

  • Alcohol content: 13,00 % vol.
  • Acidity: 6,97 g/l
  • Residual sugar content: 7,4 g/l
  • Closure type: Cork

It is perfect now but will be in perfect shape for at least five more years.  Drink 2023-2028.
