2012 DP Brut

Sparkling wine

The colour is pale, lemon-gold. Bubbles are gentle tiny and numerous. On the nose it is quite discrete and although it spent 5 years on the lees it offers a lot of freshness and a fine fruity nose in the form of lime, lemons, green and yellow apples combined with subtle yeasty and roasted notes. It speaks of complexity. Very dry on the mouth, with a very delicate mousse coming from a very long ageing on the yeasts and sharp acidity lifting the wine. With a long and fine finish.

Great aperitif, but will accompany greatly most of the dishes, especially shellfish, fish, lobster, salmon, trout …

  • Chardonnay: 70 %
  • Pinot Noir: 30 %

2012 was a warm, early and high-quality vintage with plenty of ripe and healthy fruit. Very similar to 2011 but a bit fresher and with more acidity.

Vajgen

Classic, bottle fermented, 60 months ageing on the lees.

  • Alcohol content: 12,50 % vol.
  • Acidity: 6,48 g/l
  • Residual sugar content: 3,3 g/l
  • Closure type: Cork

It is perfect now but will be in perfect shape for at least six more years. Drink 2019-2024.
